
Strawberry Cobbler

Ingredients:
Base:
- 4lbs frozen strawberries (Meijer)
- 1 package of cook-and-serve vanilla pudding (Amazon)
- 1/4 cup corn starch
- 1/2 cup sugar
- 3/4 cup gluten free flour
Topping:
- 1 cup gluten free flour
- 1 cup brown sugar
- 1 cup palm oil shortening
- 1/2 teaspoon salt
- 3 cups oatmeal
- 1/3 cup avocado oil (Amazon)
Dishes you'll have to wash:
- 1 glass baking pan, 9"x13"
- 1 mixing bowl
- 1 spoon
- 1 pie cutter/pastry cutter/shortening blender (Amazon - it goes by different names)
- Measuring cups and spoons
Instructions:
- In a bowl, mix together base ingredients (frozen strawberries, pudding, corn starch, sugar, and first part of gluten-free flour).
- Spread evenly into the bottom of a 9"x13" glass baking pan.
- In a bowl, combine some of the topping ingredients - just the gluten free flour, sugar, and palm oil shortening. Use the pie cutter to cut the ingredients together so it's a little bit clumpy.
- Add salt, oatmeal, and avacado oil to topping and mix together until clumpy but well-combined.
- Spread evenly over the base in the baking pan.
- Bake in the oven at 350 degrees for approximately 60-90 minutes.
