Spinach Rice

Ingredients:

  • 2-3/8 cups of filtered water
  • 1 cup of Royal Basmati Rice (Amazon)
  • 1/2 package of Our Family frozen chopped spinach (Family Fare)
  • About 1/4 cup of avocado oil (Amazon)
  • Some iodized sea salt (Amazon) - amount depends on how salty you like things
  • Optional - 1/4 cup or so of lemon or lime juice

Instructions:

  1. Add filtered water to a pot and turn the stove on high to start it heating.
  2. No need to wait for it to boil, just add the rice, spinach, and avocado oil to the pot.
  3. If you are using this as an ingredient in another dish, leave off the lemon/lime juice.  However, if you're eating this by itself, it does add a little tanginess to the flavor.  This is the point where you would add it to the pot if you want to use it.
  4. Add some salt as well, depending on how salty you like your food.  I probably use at least a teaspoon.
  5. Once boiling, stir periodically to mix the ingredients together.  You will have to do this several times as the spinach thaws.
  6. After the rice starts absorbing the water, turn down the heat to about medium to keep from having it burn at the end of the cooking process.
  7. Keep stirring periodically.  If you push the rice away to expose the bottom of the pot and it starts to gel and not flow as readily to fill the gap, turn the heat down to a simmer.
  8. Once the rice no longer flows when you push it with a spoon, turn off the heat.

This can be used as an ingredient in other dishes or eaten by itself.  I like to add some Carbone Mushroom Marinara Pasta Sauce (Amazon) and Our Family Finely Cut Mexican Shredded Cheese (Family Fare) on top.
